Trader Joes riced cauliflower

Greetings squad!!

It’s been a while since I’ve done a nutrition post and last night we had the perfect quick and nutritious dinner! Right now my girls are knee deep into soccer practice and games. We have lots of late nights between that and my teaching schedule. There isn’t a lot of time or desire at the end of the day to make a healthy meal. Well Trader Joe’s to the rescue once again!

I stopped by Trader Joe’s to get some essentials for the week. I simply love their produce department and their quick frozen meals. I’d rather not prepare frozen meals but sometimes in a pinch I will. We are only human after all right? And I trust Trader Joe’s to add quality ingredients to their pre-made meals. When I saw these three ingredients I knew I had a meal that my kids would eat…and almost enjoy ;-).

If you have not tried this Riced Cauliflower you need to do it stat!! It’s such a fabulous alternative to rice or pasta. It takes on any flavor that you incorporate it with. And it’s simply delightful just sautéed in olive oil and salt and pepper. That’s what I did last night. The Smoked Apple, Chardonnay Chicken Sausage is super tasty and my kids really like it. There are only 140 calories per link and 4 links per package. We didn’t even end up eating a link each so it was even less calories per meal. I also had plenty of leftovers today, lucky me!! And then there is the beautiful Sweet Potato Ribbons. I know I’m not alone on this, cutting sweet potatoes is not the most wonderful event. When I saw these at Trader Joe’s I was super excited. I planned on using them in a stir-fry later this week but then with our late start to dinner I wanted to add one more substantial ingredient and these were perfect. That’s it! All the ingredients in one beautiful bowl of heaven!

Here’s exactly how I did the meal:

  • Warmed a little olive oil in a wok.
  • Sliced sausages fairly small and added them to the wok.
  • Sauteed until almost brown.
  • I added the cauliflower and half of the sweet potatoes. Continued sautéing until everything was nice and golden.
  • Salt and pepper to taste and viola! Dinner is served!
